Here it is folks. The secret to the best, easiest and least floppiest whoopie pies in the whole world. Please take my word for it.
And i need to give credit where credit is due. Thank-you aunt Brenda for letting me in on this secret years ago. :)
They are always soft and moist. They are simple as can be. And there is pretty much no way you can flop them.Unless you get on the phone with a friend and somehow turn off your oven (in the midst of baking) instead of the timer. Then you might flop a couple pans. But only then.
The big secret is-- (drum roll please) A CAKE MIX!!
Yup. If you are a dedicated couponer you can grab the freebie cake mix boxes whenever possible. Or if you are like me grab the cheapest store brand. You mix up the cake mix like it says on the box. Then you add 1-11/2 cup of flour(depends how high and puffy you want your whoopie pies to be) to the mix. And poof!you are ready to slap them in the pan and begin the baking process. I have a Kitchen Aid mixer and usually do 2 batches at once in it.

Once you remove them from the oven, transport them carefully to a clean location where they can cool.
I guess i should mention, that before you begin the mixing and baking process...to make your job even more of a breeze.. Mix up the icing first thing and set aside!! Icing recipe will be at the end of this post.
When the cookies are cool.. fill graciously with icing and wrap in saran wrap.
Announce the day as "not going to lose any weight today" day and help yourself to as many as you dare...
Fill your containers and set them in the freezer for later use.

Whoopie Pie Icing Recipe
*2 egg whites
4 c. conf. sugar
2 tsp vanilla
1 1/2 c. shortening
4 T. hot water
1 T. flour
Beat egg white till foamy.. then add the other ingred. and beat like crazy! Or till good and creamy!! :)
This recipe is plenty for one batch.
*This egg white recipe it really, really good, but if you are finicky about raw egg whites or are making this for a bake sale.. You may want to consider finding another non egg white recipe!
